Italian Sausage and Peppers
Sausage and peppers is the Italian-American street fair favorite: browned sausages with sweet peppers and onions cooked down until jammy. Organic sausages made from outdoor-reared pork have a clean, well-seasoned flavor with no fillers, so the whole pan tastes better.

Ingredients
- 600 g organic Italian pork sausages $275
- 2 tbsp olive oil
- 3 bell peppers (red, yellow, green), sliced
- 2 onions, sliced
- 4 garlic cloves, sliced
- 1 tsp dried oregano, pinch of chile flakes, salt and pepper
- 1/2 cup organic chicken bone broth $235
- 1 cup crushed tomatoes (optional)
- Crusty rolls or pasta, to serve
Instructions
- Heat the oil in a large skillet over medium heat and brown the sausages on all sides, about 8 minutes. Set aside.
- Add the onions and peppers to the same pan with a pinch of salt and cook 10 minutes, until soft and starting to brown.
- Stir in the garlic, oregano and chile flakes and cook 1 minute.
- Slice the sausages (or leave whole), return them to the pan and add the broth and tomatoes if using.
- Cover and simmer 10 to 12 minutes, until the sausages are cooked through and the sauce has thickened.
- Serve piled into toasted rolls, or over pasta or soft polenta.
Tips
- Leave the peppers a little longer for deeper caramelization.
- Also great baked on a sheet pan at 200 °C for 30 minutes.
