Mexican Meatballs in Chipotle Tomato Sauce (Albóndigas en Chipotle)
Albóndigas en chipotle are pure Mexican home cooking: tender meatballs with rice and mint, simmered in a smoky tomato and chipotle sauce. Organic ground pork from outdoor-reared pigs keeps them juicy and flavorful, and organic eggs and bone broth round them out.

- Heat the oil in a wide pot, pour in the sauce and fry it 5 minutes, stirring, until it darkens.
- Add the remaining broth and the mint sprig, season and bring to a gentle simmer.
- Carefully add the meatballs, cover and simmer 30 minutes, until the rice inside is tender.
- Serve in bowls with plenty of sauce, white rice and warm tortillas.
Tips
- Wet your hands to shape the meatballs smoothly.
- Mix half pork, half beef for a classic combination.
