Huevos Motuleños (Yucatecan Breakfast Eggs)
Huevos motuleños come from the town of Motul and are Yucatán's favorite breakfast: fried eggs on crisp tortillas with black beans, tomato sauce, ham, peas, cheese and fried plantain. Organic eggs with deep golden yolks and organic artisan ham make this generous plate shine.

Ingredients
- 8 organic eggs $90
- 8 corn tortillas
- 3 tbsp organic pork lard, divided $340
- 2 cups cooked black beans, blended until smooth
- 4 tomatoes, 1/4 onion, 1 garlic clove, 1/2 habanero (optional) for the sauce
- 150 g organic artisan ham, diced $180
- 1/2 cup cooked green peas
- 1 ripe plantain, sliced and fried
- 60 g crumbled queso fresco or Dutch-style queso de bola
Instructions
- Blend the tomatoes, onion, garlic and habanero. Cook in 1 tbsp lard for 10 minutes until thickened; season with salt.
- Heat the beans in 1 tbsp lard, stirring, until thick and spreadable.
- Fry the tortillas in a little lard until crisp, and drain. Fry the plantain slices until golden.
- Warm the ham and peas in the tomato sauce for 2 minutes.
- Fry the eggs sunny side up in the remaining lard.
- To assemble: tortilla, beans, a second tortilla, two eggs, then spoon over the sauce with ham and peas. Top with cheese and serve with fried plantain.
Tips
- Keep the yolks runny; they become part of the sauce.
- Fry the tortillas just before serving so they stay crunchy.
