Classic Grass-Fed Cheeseburger
A great cheeseburger is all about the beef, and grass-fed patties bring a rich, slightly mineral flavor you can taste through the toppings. Ours are ready to cook from organic grass-fed beef—just season, sear hard for a deep crust and melt the cheese on top.

Ingredients
- 4 organic grass-fed hamburger patties $345
- Salt and black pepper
- 4 slices cheddar or American cheese
- 8 slices organic smoked bacon (optional) $270
- 4 brioche or potato buns
- Lettuce, tomato slices, red onion and pickles
- House sauce: 3 tbsp mayonnaise, 1 tbsp ketchup, 1 tsp mustard, 1 tbsp chopped pickles
Instructions
- Mix the house sauce ingredients and refrigerate.
- Cook the bacon in a large cast-iron skillet until crisp; drain and keep 1 tbsp of fat in the pan.
- Take the patties out of the fridge 15 minutes before cooking. Press a shallow dimple in the center of each so they stay flat.
- Heat the skillet over high heat. Season the patties generously with salt and pepper just before cooking.
- Sear 3 minutes without moving them until a dark crust forms, flip, and add the cheese immediately.
- Cover the pan for 1 minute to melt the cheese; cook about 2–3 minutes in total on the second side for medium.
- Toast the cut sides of the buns in the pan drippings.
- Spread sauce on the buns and build: lettuce, tomato, patty with cheese, bacon, onion and pickles. Serve right away.
Tips
- Grass-fed beef is leaner, so it cooks faster—aim for medium (63–68 °C) for the juiciest burger.
- Only flip once and never press the patty with the spatula; it squeezes out the juices.
